Vinification

Hand-harvested. The grapes are sorted on a vibrating table at the cellar. Traditional fermentation with natural yeasts in stainless steel tank. Aging on fine lees until the malolactic fermentation. The wine is filtered and fined before bottling.

30% in vat and 70% in old oak barrels (228L barriques) during 9 months
